Based in Les Fourgs, in the hills of the Haut-Doubs, the Aymonier Distillery carries on the tradition of mountain farmer-distillers.

The plants are grown directly on the farm using organic farming methods, before being dried and distilled on site. This complete control of the process, from plant to spirit, results in pure, authentic absinthes deeply rooted in their local area.

A visit allows you to discover the various stages of production, from processing the plants to distillation, in an approach where everything begins long before the still.

Style: Organic, artisanal mountain peasant absinthe.
