Absinthe Drying House
Located in Boveresse, in the heart of the Val-de-Travers, the Absinthe Drying House of Boveresse is one of the last remaining witnesses to the agricultural and artisanal heritage associated with absinthe in its historic birthplace.
Originally used to dry the plants destined for distillation, it highlights the importance of agricultural work in the production of absinthe. Long before reaching the still, the quality of the Green Fairy depended on the cultivation, harvesting and careful drying of the aromatic plants grown in the Val-de-Travers.
Today, the restored drying house offers visitors the opportunity to discover an essential stage of traditional absinthe production and to better understand the close relationship between landscape, agriculture and local know-how.
Each year, it also hosts part of the Absinthe en Fête celebrations, making it a gathering place for producers, locals and visitors eager to discover the absinthe heritage of the Val-de-Travers.
